Zumba Oatmeal Smoothie

Zumba Oatie-meal Smoothie 

Single Serve

1 cup apple juice
1 frozen banana
3 heaping tablespoons of uncooked organic oatmeal (or regular oatmeal)
3 tablespoons of maple syrup
Additional frozen fruit if desired

Combine all ingredients in a blender and blend until smooth.

Zumba healthy apple balls

Zumba Healthy Apple Balls
1½ cups dates
½ cup almonds
¼ cup walnuts
3 apples
2 tablespoons raisins
½ tablespoon cinnamon
Soak 1 cup dates for 30 minutes to soften then drain.
Leave remaining ½ cup dates unsoaked.

Method

Blend almonds, walnuts and both soaked and drained and unsoaked dates in food processor until chunky. Add cored and peeled (unpeeled if preferred) roughly chopped apples into blender with raisins and cinnamon and blend until desired consistency. Roll into small balls and set in fridge. Can be rolled in cinnamon or coconut if desired. Can also be put into the bottom of a glass pie dish, placed in fridge and cut into bars when set.

Zumba licious Dried Fruit Salad

Zumba licious simply quick and easy Dried Fruit Salad with Light Cream Delicately flavoured and perfect for brunch or dessert!


Preparation time: 10mins
Cooking: 10mins Serves: 4

Ingredients:

1 cup water 1/2 cup orange juice
1 tablespoon organic sugar
200g dried fruit salad mix
large pieces halved 50g dates quartered
1 cinnamon stick
125g Light Spreadable Cream Cheese
1 tablespoon reduced fat milk
1 teaspoon honey
1/4 cup flaked almonds, toasted


Method:
1. BRING water, juice and sugar to the boil in a saucepan. Simmer for 2-3 minutes until sugar has dissolved. Add dried fruits and cinnamon stick, simmer a further 5 minutes.
2. WHISK together the light Cream Cheese, milk and honey until smooth.
3. SERVE fruits warm with light Cream Cheese mix and toasted almonds.

Zumba Cashew Coconut Bars

Zumba Cashewnut And Coconut Bars


1 cup cashews,
1 cup walnuts,
1 1/4 cup shredded coconut,
1 cup dates.
Pinch salt.

Place cashews and walnuts in a food processor and blend until crumbly. Add dates, salt and 3/4 cup of coconut, blend for a minute or so. Press the mixture down into a small glass dish. Then sprinkle the remaining coconut over the oil-topped batter and place in refrigerator. Once chilled, cut into bars. Could also serve like a dessert with fresh berries and cashew cream.
