Zumba Lemon Cashew Chewies
2 cups cashews
zest from 2 lemons
juice from 2 lemons
1/2 ripe banana
½ cup honey or agave nectar
2 cups shredded coconut
1 teaspoon vanilla.
Place all ingredients in a food processor and blend until smooth. Form into rounds and refrigerate to set.
